Catshark in green herb sauce
Ingredients:

4 pieces of catshark, cut into chunks (about 150–200 g each)

2 shallots, finely chopped

2 cloves of garlic, finely chopped

A mix of fresh green herbs (parsley, chervil, chives, tarragon)

300 ml fish stock
-
100 ml dry white wine
-
2 tbsp flour
-
50 g butter
-
Salt and pepper

Lemon juice (to taste)
Method:

Season the catshark pieces with salt and pepper and lightly dust with flour.

Melt the butter in a pan and cook the shallots and garlic until translucent.

Add the catshark pieces and briefly brown on both sides.

Deglaze with white wine and add the fish stock. Simmer gently for about 10 minutes.

Finely chop the herbs and add them to the pan. Cook for a few more minutes until the sauce thickens slightly.

Season to taste with lemon juice, salt, and pepper.
Serve catshark in green herb sauce with mashed potatoes or boiled potatoes for a full Belgian meal. It’s perfect with a glass of crisp white wine. Enjoy!
